Amaretto Cake with Peach Glaze



Food Allergies are such a pain!!! I never realized how much of a pain they were until they started popping up in our family. Gluten seems to be a big culprit for us and I’m always on the lookout for Gluten Free Recipes – especially Desserts and cakes. This recipe is a winner!! The Almond flavored cake is glazed with Peach Jam (You could use Apricot also!) The Fruit Jam pairs well with the Amaretto and Almond Flavors making it a sweet treat for any time of year. I like to make it in the summer and use homemade Peach Jam.


Amaretto Cake with Peach Glaze


Nonstick Baking spray to coat cake pan


1 Cup Almond Paste, cut into pieces.


3 Tablespoons Amaretto Liqueur or 2 Tablespoons Amaretto Flavoring.


¼ teaspoon pure Almond extract


½ teaspoon Vanilla extract


½ teaspoon Orange extract


1 Cup sugar


6 Tablespoons softened unsalted butter (3/4 stick)


4 large eggs at room temperature


½ Cup of "Cup 4 Cup Gluten Free Flour"


¼ teaspoon baking powder


½ Cup peach or apricot jam


Confectioners sugar for dusting the cake (Optional)



Preheat the oven to 325 degrees.


Coat a 9 inch round cake pan with baking spray. (You can also coat the pan with butter or Crisco and then flour the pan with Gluten Free Flour).


In the bowl of your mixer, beat the almond paste, amaretto, almond extract, vanilla, and orange extract on medium speed until mixed together well. (2 to 3 minutes)


Add the sugar and continue to beat until it is incorporated into the mixture.


Add the butter and beat until fluffy.


Add the eggs one at a time and beat well.


Add the flour and baking powder and continue to mix until well incorporated.


Transfer the cake batter to the pre-greased pan.


Tap the pan on the counter a few times to release any air bubbles from the batter.


Bake for 40 minutes until a toothpick inserted into the center of the cake comes out clean.


Turn the cake out onto a wire rack and cool.


Warm the jam in the microwave for 30 seconds or until thin.


Brush the top of the warm cake with the jam.


Sift with Powdered Sugar if desired.


Enjoy!!


- No Worries - The Alcohol in the Amaretto Liqueur will evaporate out while the cake is baking!
