Chocolate Covered Strawberries

I love to make candy around Valentine’s Day. I was lucky enough to have my Grands visiting me one year for Valentine’s day and we came up with all kinds of things to dip and cover with chocolate. We had chocolate covered peanuts, marshmallows, pretzels, crushed candy canes, strawberries, banana’s and of course little fingers and faces! Our favorite by far was the Chocolate Covered Strawberries which has become a tradition for me. They are elegant and everyone loves getting a few of these every year. The added bonus is that they are super easy to make. You really should give these a try!

Chocolate Covered Strawberries

1 -10 oz bag of Guirradelli dark chocolate melting wafers.

15 to 20 Ripe Strawberries – I try to find ones that are fairly large and equal in size.

3 ounces of White Chocolate for decorating (Optional)

Remove the Strawberries from the fridge and clean and rinse them. Let them dry completely before you dip them.

In a double boiler or microwave, melt the chocolate wafers. Watch it closely to make sure it doesn’t burn.

Using the stem as a handle- dip your Strawberry into the chocolate covering it at least 2/3 of the Strawberry. Gently place your Strawberry on a piece of parchment paper and continue dipping the other strawberries using the same process. Allow the chocolate to harden.

To Decorate the Strawberries. - Melt the white chocolate wafers using the same process above. Dip a whisk into the white chocolate and swirl the whisk above the Chocolate covered Strawberries to create random thin lines of white chocolate. (This is optional)

And there you have it? Chocolate covered Strawberries.

Happy Valentine’s Day!!!

Enjoy!!!
