Fruit Pizza


Memorial Day is always the start of the Summer Season for us. And that means summer cookouts and pool parties! One of my favorite treats to take to a summer cookout is Fruit Pizza! These are super easy because you use store bought cookie dough to make the “Pizza dough”! My kids always loved to decorate the top with the different types of fruit. I used to make this like a pizza but in recent years I’ve been making them into mini pizzas. I think they travel better and they are easier to serve!

1 package of Pre-made Sugar Cookie Dough (the one in the tube in the dairy section)

1 Tablespoon cornstarch

½ cup unsweetened pineapple juice

¼ cup water

2 tablespoons lemon juice

4 ounces cream cheese, softened

¼ cup confectioners’ sugar

1 ¾ cups whipped topping

1 cup fresh blueberries (you can use a mix of blueberries, raspberries and blackberries)

1 cup chopped peeled kiwifruit

½ cup chopped fresh strawberries


Using a pizza stone, Press the cookie dough onto the pizza stone so you have one big cookie. Make the cookie dough as directed on the label. When baked, allow it to cool and then using a biscuit cutter, cut out 12 small rounds. (these will be the base for your mini pizzas). Set aside.


While the cookie is baking, make the glaze. In a small saucepan, combine the sugar, cornstarch, pineapple juice, water and lemon juice until smooth. Bring to a boil and continue to cook for about 2 minutes stirring constantly until it thickens. Transfer to a small bowl; refrigerate until cooled but not set.


In a small bowl, beat the cream cheese and confectioners’ sugar until smooth. Fold in the whipped topping.


To assemble the “pizzas” – Spread the cream cheese mixture over the tops of the cookies. Arrange fruit on top of the cookies and drizzle the glaze over the fruit. Refrigerate for 1 hour or until chilled before serving.
